Pecan Pie Cookies

1 Cup Butter (2 sticks)

½ Cup Sugar

½ Cup Dark Corn Syrup

2 Egg Yolks

2 ½ Cups Flour

2 Egg Whites

*Pecan Filling:

½ Cup Sugar

¼ Cup Butter

3 Tbsp. Dark Corn Syrup

½ Cup Chopped pecans

  1. Cream butter and sugar.
  2. Add corn syrup and egg yolks.
  3. Beat until well blended and stir in flour
  4. Chill for several hours
  5. Roll dough into 1-inch balls and brush with egg whites.
  6. Bake at 375 degrees for 5 minutes.
  7. Roll 1/1 tsp. chilled pecan filling into ball and press into center of cookie.
  8. Return to oven, baked 5 minutes longer or until lightly browned.
